The Proteinous extract of Pistacia vera showed a high inhibitory effect on Listeria monocytogenes compared with oil and steroids extracts.<br /> Eleotrophorosis was used in order to separate the Protein of Porteinous extracts, the molecular weight of these Proteins were determined.
