This paper is an exploratory study through literature. Searches are based on databases SciELO, CAPES, Google Academic and Journal of Dairy Science, published in the 1957-2016 period. Were selected 08 international articles; 05 national articles; 03 informative sites and 02 books that met the criteria for inclusion. This study showed that the evolutionary changes of the animals in question are true, and that some of these features have been shaped by their adaptations throughout the ages, taking thousands or even millions of years. At the beginning of human civilization can be said that the development of the animals took place more quickly, through the selection Artificial improving some of the features, our ancestors attributed to improvements or for the production of milk, meat and leather, or docility of domesticated species.
