Judul skripsi ini adalah "Perkembangan Industri Tahu di Cibuntu Selatan, Kecamatan Bandung Kulon, Kota Bandung Tahun 2000-2022". Fokus utama penelitian ini mencakup perkembangan industri tahu dan dampak sosial dan ekonomi keberadaan industri tahu terhadap masyarakat Cibuntu Selatan selama periode tahun 2000-2022. Tujuan dari penelitian ini adalah untuk melakukan analisis mendalam terhadap perkembangan industri tahu, upaya yang dilakukan oleh pelaku usaha dalam pengembangan industri tahu, serta dampaknya terhadap aspek sosial ekonomi masyarakat Cibuntu Selatan. Metode penelitian yang digunakan adalah metode sejarah yang mencakup tahapan heuristik, kritik sumber, interpretasi, dan historiografi. Hasil penelitian mengungkapkan bahwa industri tahu pertama kali muncul di Cibuntu Selatan dipengaruhi oleh faktor geografis dan historis, khususnya dari pengaruh peranakan Tionghoa di daerah Andir yang memulai produksi tahu. Perkembangan usaha tahu kemudian dimulai oleh Asmita dan Sumaasmita pada tahun 1940an dan mencapai puncak kejayaan pada tahun 1980 karena jumlah usaha tahu yang banyak di Cibuntu. Namun, sejak tahun 2000, industri tahu di Cibuntu Selatan mengalami penurunan akibat liberalisasi kacang kedelai oleh pemerintah, menyebabkan kenaikan harga bahan baku yang berdampak pada biaya produksi dan keuntungan pelaku usaha tahu menurun. Meskipun mengalami penurunan, keberadaan industri tahu tetap memberikan dampak sosial ekonomi bagi masyarakat Cibuntu. The title of this thesis is "The Development of the Tofu Industry in South Cibuntu, Bandung Kulon District, Bandung City, from 2000-2022." The primary focus of this research encompasses the development of the tofu industry and the social and economic impact of the existence of the tofu industry on the South Cibuntu community during the period from 2000 to 2022. The objective of this research is to conduct a comprehensive analysis of the development of the tofu industry, the efforts made by entrepreneurs in developing the tofu industry, and its impact on the social and economic aspects of the South Cibuntu community. The research method used is the historical method, which includes heuristic, source criticism, interpretation, and historiography stages. The results of the research reveal that the tofu industry first emerged in South Cibuntu influenced by geographical and historical factors, particularly the influence of the Chinese descendants in the Andir area who initiated tofu production. The development of the tofu business began with Asmita and Sumaasmita in the 1940s and reached its peak in the 1980s due to the numerous tofu businesses in Cibuntu. However, since 2000, the tofu industry in South Cibuntu has experienced a decline due to the government's liberalization of soybeans, resulting in an increase in raw material prices that impact the production costs and reduced profits for tofu entrepreneurs. Despite the decline, the existence of the tofu industry continues to have social and economic impacts on the South Cibuntu community.
