Summary:The prevalence in of Type 2 Diabetes Mellitus (T2DM) increasing every year and can causes hyperglycemia that can affected in other complications. Dadih with the addition of yacon tuber syrup have an antidiabetic effect which can prevent postprandial hyperglycemia. This study aims to formulate dadih with the addition of yacon tuber syrup as well as analyze nutritional compound, total phenol, and sensory acceptance in product. The research method in this study uses an experimental study with completely randomized design (CRD) with one-factor and two repetitions. The factor is the addition of yacon tuber syrup (10%, 20%,30%) in dadih. The result from nutritional and phenol analyses used Anova test and continued with Duncan test, while the result from hedonic test uses Kruskal Wallis test and continued with Mann-Whiney test. The result in chemical analyses showed there is no significant effect (p>0,05) on water, protein, fat, carbohydrate, and total phenol content, while there is a significant effect (p<0,05)t in ash content. The result in hedonic test showed there is no significant (p>0,05) in all parameters. Determination of the selected formula using the Exponential Comparison Method (ECM). The selected formula in this study was F3 with the addition od 30% yacon syrup.
