The higest prevalence of food poisoning cases in West Java with 405 cases. In 2020, there were 45 extraordinary incidents of food poisoning, 4 of which occurred in West Java. 20% of these cases are caused by the catering industry. The purpose of this study was to determine the application of food safety with Permenkes RI No. 1096 of 2011 on food processing in the catering industry located in Bogor Regency during the COVID-19 pandemic. This research is a qualitative research. Data in this study collected using interviews and observation. Informants in this study were the owner as the main informant, the person in charge as the key informant, and the consumer as the supporting informant. The results indicate application of food safety in the selection of food ingredients and transportation with Permenkes RI No. 1096 of 2011. The results also show discrepancies in the application of food safety in the aspects of raw material storage, food storage, hygiene facilities and sanitation facilities. Improvements are needed so food safety can be maintained and the food is safe for consumption.
