Portrait of Rufus Estes from his cookbook, ''Good Things to Eat'' Rufus Estes (c. 1857–1939) was an American chef and author. He was born into slavery and as an adult worked as a chef aboard luxury railway cars operated by the Pullman Company in the 19th century.
