Summary:Diabetes mellitus (DM) is a metabolic disease that can trigger free radical compounds in the body. Beetroot is one of the foods that contain phenolic content which can cause antioxidant activity useful for reducing free radical compounds. This study aims to analyse the effect of beetroot juice addition to phenolic content, antioxidant activity, and sensory acceptance of seaweed pudding, choose the best formula and know the nutrition content of the best formula. This study used experimental research with a one-factor completely randomised design (CDR) with two repetitions. This pudding is divided into three formulas of F1 addition (55%), F2 addition (60%), and F3 (65%). Organoleptic test analysis used the Kruskal Wallis test and continue with the Mann Whitney test. Analysis of antioxidant activity and phenolic content data were analysed using ANOVA and if there any difference will continue with the Duncan test. The result of the analysis showed the rate of addition of beetroot juice had a significant effect (p=0,000) on the level of preference for the panellist on taste parameters and had a significant effect on phenolic content (p<0,05) but not with antioxidant activity (p>0,05). The selected formula is F3 of seaweed pudding with the addition of beetroot juice 65% which has a water content of 91,06%, ash content 1,17%, carbohydrate content 5,91%, protein content 1,25%, fat content 0,73%, antioxidant activity 19023,32 ppm, and phenolic content 42,3 ± 0,7071 mg GAE/100 grams.
